Here is one person\u2019s breakdown.  <\/p>\n\n\n\n<p>There is a wide range of raw milk dairy prices across the board, but how do you know your prices make sense based off a gallon of milk?<\/p>\n\n\n\n<p>Here is a simple breakdown on price setting costs!<\/p>\n\n\n\n<p>Starting point:<br>Milk value $15\/gallon = $7.50\/half gallon = $3.75\/quart = ~$0.94\/cup.<br>This is your base price to compare against, you can enter any value and adjust accordingly.<\/p>\n\n\n\n<p>Pricing based on your $15\/gal milk:<br>\u2022 Butter: $20\u2013$25\/lb<br>\u2022 Buttermilk: $5\u2013$6\/qt<br>\u2022 Cream: $12\u2013$15\/pint<br>\u2022 Yogurt: $5\u2013$6\/qt<br>\u2022 Fresh Cheese: $15\u2013$20\/lb<br>\u2022 Aged Cheese: $50\u2013$80\/lb<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Butter<br>\u2022 1 gallon of milk = ~2 cups cream.<br>\u2022 2 cups cream \u2192 ~\u00be lb butter + 1 cup buttermilk.<br>\u2022 That means ~1 lb butter takes about 2.5\u20133 gallons of milk.<br>\u2022 If 1 gallon milk = $15, then just the milk input for 1 lb butter = $37\u2013$45.<br>\ud83e\uddc0Suggested price: $20\u2013$25 per pound (raw, small-batch butter often runs $20\u2013$30\/lb at farmstands).<\/li>\n\n\n\n<li>Buttermilk<br>\u2022 Byproduct of butter.<br>\u2022 Costs are \u201ccovered\u201d by the butter pricing, so you can sell it lower.<br>\ud83e\uddc0Suggested price: $5\u2013$6 per quart.<\/li>\n\n\n\n<li>Cream<br>\u2022 A gallon of milk gives ~1 pint of cream, varies with breed\/feed\/individual cow.<br>\u2022 That pint of cream \u201ccosts\u201d the $15 you could have gotten for selling the whole gallon.<br>\ud83e\uddc0Suggested price: $12\u2013$15 per pint raw cream is a premium item and can be scarce.<\/li>\n\n\n\n<li>Yogurt<br>\u2022 1 gallon milk makes ~1 gallon yogurt.<br>\u2022 Plus starter and incubation, but not much shrinkage.<br>\ud83e\uddc0Suggested price: $15\u2013$18 per gallon, or $5\u2013$6 per quart, slightly higher than milk since it\u2019s value-added.<\/li>\n\n\n\n<li>Cheeses<br>\u2022 Yields vary a lot:<br>\u2022 Fresh cheeses, chevre, queso fresco, paneer: ~1 lb cheese per gallon milk.<br>\u2022 Aged\/harder cheeses: ~1 lb cheese per 10 gallons milk.<br>\ud83e\uddc0Suggested pricing:<br>\u2022 Fresh cheese: $15\u2013$20\/lb.<br>\u2022 Aged cheese: $50\u2013$80\/lb since the yield is tiny and aging takes space\/labor.<\/li>\n<\/ol>\n\n\n\n<p>As always, know your state regulations for dairy.<br>Know your farmer.<br>Shop local.<br>Barter when you can!<\/p>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Knowing the value of your milk, can help you value the products you make from your milk.
